At Sushi Shutatsu, we use Hatsushimo, a premium rice from Gifu often referred to as “the phantom rice” due to its rarity.
Unlike Koshihikari—one of Japan’s most famous brands—Hatsushimo belongs to an entirely different lineage. It is known for its large grains and beautiful glossy appearance.
While Koshihikari is soft, sweet, and sticky, Hatsushimo offers a pleasant firmness and a clean, light flavor.
Its subtle sweetness and restrained stickiness create a crisp finish, making it an ideal sushi rice that enhances, rather than overpowers, the taste of the fish.
At Sushi Shutatsu, we cook Hatsushimo to an al dente texture and fine-tune the temperature to create the perfect shari.
