Sushi × Japanese Tea Pairing Logic

The idea is similar to wine pairing: sometimes we match intensity, and sometimes we refresh the palate with contrast.

1. Match or Contrast

・Match (Synergy): Rich sushi pairs with rich tea, enhancing umami.  

 Example: Fatty tuna × Gyokuro (umami + umami).

・Contrast (Refresh): Heavy flavors pair with light or roasted tea, cleansing the palate.

 Example: Uni / Ikura × Fukamushi Sencha (resets the richness).

2. Role of Each Tea

・Sencha: Refreshing and light astringency. Best with white fish or appetizers.

・Gyokuro: Intense umami and sweetness. Perfect with chutoro, abalone, or scallops.

・Genmaicha: Nutty aroma. Complements shellfish or grilled dishes.

・Hōjicha: Roasted and clean. Ideal with stronger flavors or grilled items.

・Fukamushi Sencha: Thick-bodied, smooth. Balances rich toppings like uni and ikura.

・Matcha: Deep and refined. Serves as the finale with dessert or tamago.

3. Simple Rules

・Light flavors → Light teas (white fish × sencha).

・Rich flavors → Rich or roasted teas (fatty tuna × gyokuro, grilled dishes × hōjicha).

・Strong umami → Umami-rich teas (shellfish × gyokuro).

・Oily or heavy items → Refreshing teas (uni / ikura × fukamushi sencha).

・End of the course → Matcha for a graceful finish.
